Gluten Free Chocolate Brownies

cocoa-beans-499970_640Did you know that hot cocoa contains more antioxidants per cup than a serving of red wine or tea? If you are like most people and crave rich, creamy chocolate and avoid it because it is high fat, high sugar and unhealthy, you are not alone!

Many chocolate products are unhealthy and calorie dense because of the extra sugar and additives during processing. The actual cocoa powder, which comes from the cocoa bean, is highly nutritious and provides many health benefits. Good news, indulging from time to time may improve your health. Some of the health benefits include:

  • May improve mood and provide antidepressant benefits
  • May help fight cancer, heart disease and aging through its antioxidants
  • May lower LDL cholesterol
  • Increased blood flow to arteries
  • May lower high blood pressure
  • Provides minerals such as calcium and potassium

  • 4 large eggs
  • 1 cup unsweetened cocoa powder
  • 1 cup coconut palm sugar
  • 1/4 cup + 1 tbsp coconut oil
  • 2 tsp vanilla extract
  • Dash of salt

Instructions:

  1. Preheat oven to 350
  2. Blend ingredients in a bowl until smooth
  3. Pour into a parchment lined 8×4 loaf pan
  4. Bake 25-30 minutes
  5. Brownies will be soft in the middle.
  6. Let cool at least 5 hours before slicing
  7. Enjoy!
