Roasted Brussel Sprouts

5555678887_c79dfb089d_zThis is one of my favorite recipes! I promise that if you do not like Brussels sprouts you will LOVE them after trying this recipe!

Ingredients

1 pound of Brussels sprouts, stems cut off and quartered

2-garlic clove, minced

1 tbsp. fresh thyme

2 Tbsp. Coconut oil, melted

Sea salt and black pepper to taste

Instructions

1.    Preheat oven to 375 degrees

2.    In a medium sized bowl, toss the quartered Brussels sprouts with the minced garlic, thyme, melted coconut oil, salt and pepper. Spread evenly into roasting dish and bake in preheated over for 40-45 minutes or until Brussels sprouts are browned and tender. Stir once halfway through cooking time.

3.    Enjoy!
